10. FISH TACO BOWLS

INGREDIENTS

  • 4 small cod fillets
  • 1 packet taco seasoning
  • 1 tablespoon olive oil
  • 1 large garlic clove, minced
  • 1 red onion, diced
  • 1 red bell pepper, diced
  • 1 cup corn kernels
  • 1 15-ounce can black beans, drained and rinsed
  • 3 cups cooked rice
  • For garnish:
  • Chopped fresh cilantro
  • Cubed avocado
  • Lime wedges

INSTRUCTIONS

  1. Coat cod fillets with taco seasoning.
  2. In a large skillet *affiliate link, heat olive oil to medium-high heat. Add garlic and sauté until fragrant, about 30 seconds.
